Brinjal has a glossy skin and come in wide range of shapes, sizes and colors while the flesh is creamish and spongy in texture and contains numerous small, soft edible seeds. It is rich in B-complex vitamins and contains several essential minerals especially manganese & potassium,and also has good water content.
Brinjals contain high amounts of anthocyanins especially the purple colored ones which protect the body from health risks, like inflammation and neurological diseases. These are capable of improving the flexibility of blood vessels, resulting in improved blood circulation. It effectively treats enlarged spleen caused due to malaria. Cabbage is amongst one of the most highly rated vegetables. It is the round, light green or white head variety whose outer leaves vary from pale green to dark green and the inner leaves are white to pale green. It has a mild flavor and a crisp texture.
Cabbage is used to provide relief in case of skin conditions such as acne, eczema and psoriasis. The phytonutrients in cabbage have anti cancer, anti-inflammatory and immune boosting properties and helps lower LDL or bad cholesterol levels in blood.


Capsicums also called peppers or bell peppers have three reasons to be loved. One, it adds a dynamic personality to your food owing to its vibrant colour. Two, it blends into any dish and brings out a certain zing and flavour. Although they belong to the same family as chilies, capsicums are mild-flavored and can jazz up a salad, lend a perky crunch to your pizza or pasta, and tastes fantastic when roasted.

The carrot is a root vegetable long, narrow and cylindrical/ cone shaped usually bright orange in color, and available throughout the year. Naturally sweet, and crunchy, carrots are healthy additions you can make to the vegetable list in your diet as they contain several health benefiting nutrients such as beta-carotenes, vitamin A, minerals and anti-oxidants in ample amounts.
Carrots are rich in beta-carotene, a precursor to Vitamin A which protects against macular degeneration and senile cataracts as well as helps night vision. Carrots clean the teeth and mouth. They scrape off plaque and food particles just like toothbrushes or toothpaste. Carrots stimulate gums and trigger a lot of saliva, which being alkaline, balances out the acid-forming, cavity-forming bacteria. Also, the minerals in carrots prevent tooth damage.



Cauliflower has a firm but spongy texture and a slightly bitter flavor with a sulfurous hint. It is good source of minerals like manganese, phosphorous and potassium. 1 cup of boiled cauliflower can already give you 55 mg of vitamin C.

Cauliflower also contains high amounts of vitamin K and omega-3 fatty acids, which help decrease inflammation. It helps to clean your digestive system and gets rid of unnecessary substances.


Cucumber is green-skinned fruit with edible seeds and soft white flesh. Cucumbers grown to be eaten fresh (called slicers) and those intended for pickling (called pickles) are similar. They are grown on virtually all the continents and they find a place in all types of cuisine.

Coriander commonly known as Cilantro or Dhania, is a powerful green colored herb with many health benefits. Bottle gourd is round fresh vegetable with a light green smooth skin and a white inner flesh. This is very low in Calories and has high water content and dietary fibre. It is a very good source of Vitamin C, Potassium and Zinc.

Lemon is a small citrus fruit, like a small orange, with skin and flesh that are green in color. They have a pleasant aroma, which is commonly referred to as a lemony aroma. Its outer peel is bright yellow in color and contains essential oil that is mainly limonene.
